Beans Pathichu Olarthiyathu Recipe by Indu Mathew
4 cups beans , sliced into pieces 1 “
1 small half onion , chopped into moon slices
4 – 5 green chilies , slit lengthwise
1/4 cup coconut slices
sprig 1 curry leaves
1/2 teaspoon mustard seeds
To taste, salt
4 tablespoons coconut oil
- Heat oil in a wok, and splutter mustard seeds in it.
- Add onion slices, green chilies and coconut slices and saute for a minute. Follow with the beans and stir well. Add salt and throw in the curry leaves. Over a medium heat saute the beans till they are starting to brown. (This is how it is usually done, but you can stop whenever the beans is as cooked as you like.) You can add more oil if you find the beans are drying out and havent yet been cooked properly.
- Once done, remove from heat and serve with parboiled rice.
- You can partially cook the beans in water before you start to stir fry. This reduces cooking time, and you would need to use less oil as well.
