Calicut Chicken Curry

While I love pasta and pizza, this Calicut chicken curry with rice and a salad on the side is the kind of food I love to eat after a hard day at work. Unlike other chicken curries from Kerala, the only masala this curry uses is red chili powder and coriander powder. And the flavour that comes from the coconut oil, coconut milk and coconut slices makes it truly ‘Keralan’ (as phirangis would say).

Ingredients

1.2 kg Chicken pieces (on the bone),  
2 tablespoons Red chili powder ,
4 tablespoons Coriander powder ,
1/2 cup Coconut oil ,
1 1/2 tablespoons Chopped ginger ,
1 1/2 tablespoons Chopped garlic ,
sprigs 2 Curry leaves ,
4 Chopped onions (large),
2 Chopped tomato (large),
1 teaspoon Pepper powder ,
1 cups coconut milk (thick),
1   1/2   cups Coconut milk (thin),
to taste Salt ,
Tempering
1/8 cup Coconut oil ,
1 teaspoon Mustard seeds ,
3 Dried red chilis ,
10 Sliced Shallots ,
4 tablespoons Coconut slices ,
sprigs 2 Curry leaves ,

Steps

  1. In a pan, roast chili powder and coriander powder over low heat and keep aside.
  2. Heat coconut oil. Saute ginger, garlic and curry leaves till fragrant. Add onions and saute till light brown. Add tomato, pepper powder, the roasted chili  and coriander powders and saute for 3-4 minutes over low heat.
  3. Season as required.
  4. Add chicken pieces and thin coconut milk. Cover and cook till the chicken is done and gravy is thick. Mix in thick coconut milk and bring to boil. Take off heat.
  5. In a small pan, heat coconut oil for tempering. Add the remaining ingredients for tempering and let fry for a couple of minutes. Mix into the prepared curry.
  6. Serve hot with rice.
