Plantain Cutlets

Mummies, these plantain cutlets are the perfect after school snack for your ravenous little tykes. I only wish my mom had discovered the recipe a couple of decades earlier!

To make these cutlets, you need to mix some chopped plantain with sugar, coconut, ghee and cardamom powder. Shape them into smalls rounds, dip them into beaten egg white (or a loose plain flour paste if you are vegetarian), coat with bread crumbs and deep fry.

Ingredients

2 Finely chopped ripe Plantains (small),
3 tablespoons Plain flour ,
1/2 teaspoon Cardamom powder ,
3 tablespoons Powdered Sugar ,
1 tablespoon Ghee (saturated butter),
3 tablespoons Freshly grated coconut ,
1 Egg white ,
1/4 cup Bread crumsbs ,
/ SunflowerVegetable Oil , to deep fry

Steps

  1. Mix together all the ingredients except oil. Adjust sweetness according to taste. Shape into small balls, the size of limes. Dip each ball into lightly beaten egg white (or a loose paste made with plain flour and water) and coat with bread crumbs.
  2. Heat oil in a wok. Over medium heat, fry the balls till golden brown. Remove with a slotted spoon and serve hot.
